Many options exist to tantalize your most sophisticated gourmand, or to compliment your super-relaxed and festive atmosphere. Early in your menu planning process, decide what kind of service best fits your wedding style. Do you want a formal sit-down din- ner, complete with a selection of entrees and precisely assigned seating? Would you prefer chef-manned stations for a touch of entertainment and esh food that is created, and even custom- ized, in ont of your guests throughout your meal period? Are you planning to host a cocktail party that would be best comple- mented by heavy hors d'oeuvres? Whichever style you choose, make sure that the menu is person- alized to reflect your own tastes. Personalizing your menu with his childhood favorite snack, or the dessert you two shared on romantic dates in college. Many caterers welcome a challenge. If you absolutely must have your grandmother's "secret" lasagna, provide your chef with a copy of the recipe and ask if he or she is able to modify it for your audience. The fun doesn't have to stop with the meal. Signature beverages are delightful additions to your cocktail period. Feature your fa- vorite cocktails, have your caterer custom design one and cleverly name it for you, or choose beverages that are perfect for the time of day when your reception will occur. You can also customize dessert bars, candy buffets and other sweet treats as long gone are the days of the mandatory three-tiered vanilla pound cake. The food and cocktails you serve on your wedding day will be some of the most memorable details your guests will enjoy.
