"In 1983, Jim Lampman, owner of Burlington, Vermont's acclaimed Ice House Restaurant on the Lake Champlain waterfront, was buying expensive boxes of chocolates as gifts for his staff. One day, his pastry chef, a man of high epicurean standards, took Jim aside after receiving one too many boxes. 'These chocolates are terrible,' he confessed. 'All right then, you do better!' Jim challenged him. Shortly thereafter, Jim was presented with hand rolled, distinctively flavored truffles - the finest chocolates Jim had ever tasted. Jim began serving them Sundays to select restaurant patrons. The response was so favorable, Jim founded Lake Champlain Chocolates to keep up with the demand." Today, Jim still owns and runs the company with his two children working alongside as part of purchasing and research & development. Recipes have been developed by David Bolton who retired last year, but previously worked loyally with Jim almost from the very beginning of the endeavor and today, Lauren Dietsch, a recent culinary school graduate is cooking up new ideas. I asked Meghan Fitzpatrick, who helps with marketing the truffles, now sold to numerous wholesale gourmet customers as well as in 3 local retail stores and online via their website, what exactly makes a chocolate truffle a "truffle?" "A truffle has ganache (the soft center in the middle) and I think that's what really sets it apart. Ganache can be made in a variety of ways, some are more fudgy, some are more creamy. We're very proud and have worked hard to develop the taste and consistency of our ganache. We use local, award-winning butter from Vermont Butter & Cheese Creamery, fresh cream from a 3rd generation dairy farm in Vermont and the finest quality chocolate. We also use only all-natural flavors - for instance there is real Columbian coffee in our Cappucino truffle and real champagne in our Champagne truffle." www.artizenmagazine.com 26
