discussing Giancarlo's willingness to experiment, which I know means you have to experience a lot of early failure as you arrive at your best. "Well, I have to throw out this curve ball, though I know there are many people who may not think the way I do. For me, as I came to understand "religion" and how one comes to relate to one's God, I finally came to believe that work is worship. All that Catholic guilt I had, growing up, went out the window. When I'm here, I'm in my church. I am worshipping the Lord. You do it with respect and integrity. We talk about opening up and finding out who you are? We have be very strict, and committed and passionate about it, no matter what we do." With that he launches into a cheerful demonstration of how he "experimentally" came up with a lemon cake using skimmings of cake that might otherwise have been thrown away. His respect and love for his ingredients along with a commitment to using as much of them as he can, brought him to "playing" and he came up with yet another creative combination that's now taken home by bakery customers. We've talked for several hours and I'm the very happy recipient of a portion of the lemon cake demonstration. On 14 my drive home, I can't help but wish I had an upcoming celebration to share with Giancarlo and his wife, knowing the care they would bring to the grand finale of the meal. I'm looking forward to recommending Giancarlo's bakery both to future brides and anyone on a weekend visit to central Virginia. Whether it's cake, pasty, bread or chocolate you're looking for, it is MY humble opinion, you will not be disappointed by a visit to his shop.
